Wir betreiben im Moment eine Exchange Mixed Mode Infrastruktur (Exchange Server 2003/2007), kann Allocatus damit umgehen kann?

Ja, das ist möglich. Zur Kommunikation mit Allocatus Server kann sowohl ein Exchange Server 2003 Front-end Server oder ein Exchange Server 2007 Client Access Server (CAS) dienen
